Crispy Barberry and Nut Granola Clusters Recipe

Ingredients

  • 3 cups rolled oats
  • 1 cup raw almonds, roughly chopped
  • 1/2 cup raw sunflower seeds
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup coconut flakes
  • 1/2 cup USimplySeason Barberries
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  • Preheat and Prep: Preheat your oven to 300°F (150°C). Line a baking tray with parchment paper.
  • Combine Dry Ingredients: In a large mixing bowl, combine the oats, almonds, sunflower seeds, pumpkin seeds, and coconut flakes.
  • Warm Wet Ingredients: In a small saucepan, heat the honey (or maple syrup), coconut oil, vanilla extract, cinnamon, and salt over medium heat until well combined.
  • Coat and Press: Pour the liquid mixture over the dry ingredients and stir well to ensure everything is evenly coated. Spread the mixture out evenly on the prepared baking tray. Press down firmly to compact and form clusters.
  • Bake and Cool: Bake in the preheated oven for about 25-30 minutes, or until the granola is golden brown. Watch carefully to avoid burning. Remove from the oven and let cool completely on the tray. Don't stir while hot, or the clusters will break.
  • Add Barberries and Store: Once cooled, sprinkle the dried barberries over the granola and gently mix them in, preserving the clusters. Store in an airtight container at room temperature for up to two weeks.
