Barberry and Orange Glazed Chicken

This sweet and tangy chicken dish is perfect for a weeknight dinner or a special occasion. The barberries add a nice texture and tartness to the dish, while the orange glaze provides a nice citrusy note. Serve it with a side of roasted sweet potatoes or a mixed greens salad.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup barberries
  • 1/4 cup orange marmalade
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F.
  2. In a small bowl, whisk together the orange marmalade, soy sauce, honey, olive oil, salt, and pepper.
  3. Place the chicken breasts in a baking dish and pour the glaze over them, reserving some glaze for basting later.
  4. Sprinkle the barberries over the chicken.
  5. Bake the chicken for 25-30 minutes until it is cooked through, basting it with the remaining glaze every 10 minutes.
  6. Let the chicken rest for a few minutes before slicing and serving.
